Strawberry Brownie Ice Cream

You can't go wrong with strawberries and chocolate, right?! The double chocolate chip brownies combined with the fruity strawberry ice cream is just to die for!

Equipment

  • 1 Ice Cream Maker

Ingredients
  

Ice Cream

  • 1 cup whole milk
  • 3/4 cups granulated sugar
  • 1/8 tsp salt
  • 2 cups heavy cream
  • 1 Tbsp pure vanilla extract

Strawberry Sauce

  • 3/4 lb strawberries quartered
  • 3/4 cup granulated sugar
  • 1 Tbsp lemon juice
  • 1/8 tsp salt

Brownies

  • 1 box brownies your choice!

Instructions
 

Ice Cream

  • Add 1 cup milk, 3/4 cup sugar, and 1/8 tsp salt into a medium bowl and whisk until the sugar is completely dissolved.
  • Stir in 1 Tbsp vanilla and 2 cups heavy cream
  • Cover the bowl and place in the fridge for 1-2 hours or overnight. (I usually do overnight)
  • Once the ice cream has chilled the proper amount of time, add mixture to your ice cream maker.
  • Slowly spoon in the chilled strawberry sauce as the mixture churns.
  • Once the ice cream has fully churned (about 20-25 minutes) put it in a freezer safe container and gently fold in brownie chunks.
  • The ice cream can be served right away, but I usually put it back in the freezer for a couple more hours for a more firm consistency.

Strawberry Sauce

  • Heat all the strawberry sauce ingredients in a saucepan on medium heat.
  • Stir frequently until the mixture has thickened nicely. (Use a masher if you don't want big strawberry chunks)
  • Let the mixture cool completely and store in the fridge until the ice cream is ready to be churned.

Brownies

  • Follow the instructions on your brownie mix, or if you're really ambitious, you can make some homemade!
  • Once the brownies have fully cooled, cut into chunks

Notes

*it is ALWAYS important to make sure that your ice cream bowl has been frozen for 24 hours before churning. If not, the ice cream won't churn
*When the ice cream starts to overflow onto the top lip of the bowl, that's when I know it's done churning
