Homemade Bourbon Ice Cream
One thing I love about this recipe is that it’s so simple! I decided to make a regular ice cream this time, no egg yolks!
A homemade ice cream with egg yolks (also known as custard) is extra creamy and delicious, but I wanted this particular flavor to feel a little “lighter”!
Custard is amazing though! Here’ are’s a few of my favorite custard base ice creams:

The Key Ingredients
Bourbon
Obviously the star of the show!
This was my first time using alcohol in an ice cream and I have to say, I was a fan! This homemade bourbon ice cream is officially one of my new favorite flavors!
I used 2 Tablespoons of bourbon (Maker’s Mark to be exact!) and felt that was the perfect amount to really recognize the flavor, but not alter the texture of this ice cream too much… since alcohol doesn’t freeze!
Not to mention, I knew i’d be getting some bonus bourbon flavor from the blondies as well!
But you can determine how much alcohol you want to use! If you want a stronger bourbon flavor, I would use 4 Tablespoons at most!
Vanilla Bean Paste
Normally I use pure vanilla extract in my ice creams and desserts, but I’ve been wanting to try a vanilla bean paste for a long time and thought this was the perfect opportunity!
This is the vanilla bean paste that I got and has been recommended to me in the past!
I loved it. It’s a splurge, but it just has the most incredible flavor… that characteristic vanilla taste! Aesthetically, I just love seeing those tiny black specks in my ice cream!
Fresh vanilla bean would also (of course) be amazing!!
Brown Sugar
This creamy brown sugar ice cream has such a rich, deep flavor that really compliments the bourbon.
If you want an even more decadent recipe, you can use dark brown sugar! I used light brown sugar for this because it’s what I had on hand, but next time I’ll try the dark!

Brown Butter Bourbon Chocolate Blondies
You’ll notice that I love incorporating my favorite dessert recipes into my own ice cream! And all I have to say regarding these brown butter bourbon blondies is wow.
You can guarantee I’ll be bringing these to my next gathering because I know they’ll be a crowd pleaser! They’re also easy to make with ingredients I always have on hand!

Ice Cream Containers
You’ll want an air-tight container to store your ice cream in. This will keep your homemade ice cream nice and fresh and prolong the formation of ice crystals!
I’ve been using these ice cream containers for a while now and they’ve been good to me! I do wish I could find some that are more my aesthetic (lol I am who I am????) but I haven’t stumbled upon anything yet!
Homemade Bourbon Ice Cream Recipe with Blondies
Equipment
- 1 Ice Cream Maker
Ingredients
- 1 cup milk
- 2/3 cup sugar
- pinch of salt
- 2 cups heavy cream
- 1 Tbsp vanilla bean paste
- 2 Tbsp bourbon
- Brown Butter Bourbon Chocolate Blondies see below!
Instructions
- Chill your ice cream bowl in the freezer for at least 24 hours
- In a large bowl, whisk the milk, sugar, and salt. Whisk until the sugar completely dissolves! (This takes 3-5 minutes)
- Stir in the heavy cream, vanilla paste, and bourbon
- Cover the milk mixture and refrigerate for at least 2 hours or overnight (I always do 24 hours)
- Pour mixture into the frozen bowl of your ice cream maker and churn!
- Churn the bourbon ice cream for about 20-25 minutes, until it's your desired consistency
- Cut the chocolate blondies into bite size pieces
- Pour 1/2 of the ice cream mixture into an airtight container
- Layer 1/2 of the blondie cubes and fold them into the bourbon ice cream
- Pour the rest of the ice cream followed by the rest of the blondies and fold again
- Ice cream can be enjoyed right away or frozen overnight for a firmer texture

You guys. This homemade bourbon ice cream is absolutely delicious. I’ve had it the past two nights- the first night with a waffle cone and the next in a bowl with some whipped cream and oh my gosh????
Dan even said this batch of ice cream his favorite i’ve made so far! (And I’ve made a LOT of flavors)
